Since I just made this dish for the second time this week (lots of squash growing in the garden this year!), I figured I should share…
Preheat oven to 350 degrees.
Fill a glass cake pan (easier cleanup) with zucchini & yellow squash
+2 scoops of sour cream (or about 1/4 c)
+a few shaves of butter (or about 2 TBSP)
+cheese (about 1/4 c)
+top with dry stuffing mix, crackers, etc
+spices of your choosing
Mix it up and cook for about 20 minutes or till your squash is cooked nicely (the smaller you dice them, the quicker they cook!). Serve on a bed of noodles. I used spaghetti noodles. I just kinda came up with this one on the fly… You can add or reduce things to your liking. Just feel it out! 🙂 Enjoy!
